Anthony and Carol Boutard’s Ayers Creek Farm near Gaston, Oregon produces food that chefs fight to get. They carefully select seed from the best plants in their crops to ensure constant improvement. Famous for its use in cassoulet, the firm white beans were supposedly a wedding gift to Catherine de Medici, future wife of Henry III, and the first haricots tarbaise were planted in 1553 by the bishop of the local diocese. Since these grow here in the Pacific Northwest, the Boutards think of them as Tarbais-adjecent, hence the name Tarbesque.
