This non-vintage brut cava comes from Penedès, Spain's center of cava production; it is rich yet floral, the blend comprising traditional Catalan grapes Parellada, Xarel-Lo and Macabeo. The wine is made in the "traditional method," which is to say the same technique employed in Champagne production, and undergoes extended ageing on the lees, or dead yeast, to increase its intensity of flavor and give the wine a slightly creamy texture. Fresh and clean, it's the perfect accompaniment to lighter tapas, salads, and sunny spring afternoons.
