Lucius Hamilton Hayward began selling beans in New Orleans in 1923. He called his new company Camellia after his wife’s favorite flower. Green baby lima beans, originally from Peru, are less starchy and earthy tasting than their larger cousins. They retain their minty green color when cooked, and they make a lovely side dish or bean salad.
