
This mild, fruity vinegar comes from the Casa Stivalet plantation in the beautiful state of Veracruz. Unlike some inferior products, this isn't plain vinegar with banana flavor added; it's made from fermented platano machos, a breed of banana that falls somewhere between a regular banana and a plantain. Rich and delicious but never cloying, with a 6% acidity, it livens up salads and absolutely sings with ceviche. We’ve even seen it put to use as a dessert topping: add 2 parts vinegar to one part sugar and drizzle over vanilla ice cream for a transcendent experience.
