Ito Shoten has made miso and tamari for more than 200 years in Taketoyo; tamari is pressed from miso, not brewed like soy sauce. Made with only Japanese-grown soybeans and natural sea salt, slowly aged for three years in cedar casks, the tamari has a thick, caramel-ish, smoky, meaty, deep umami flavor. Best used at the table, please refrigerate after opening.
