Escabache is a classic sauce/marinade hybrid based on a mixture of vinegar and smokey pimenton. These clean + briny Galician mussels are steam shucked and gently fried before being hand-packed into the flavorful sauce. Serve alongside crusty bread and olives for an easy appetizer, or enjoy as we do: on toothpicks straight out of the tin.
