Spring Brook Farms Tarentaise is made with the raw milk from 42 Jersey cows. It is styled after the French alpine cheese, Abondance. Made in copper vats and aged on wood. Very traditional. Notes of brown butter, toasted almond, red berries, and floral undertones. All of the profits from the cheese goes to support Farms For City Kids which brings urban kids out to the farm for a week long stay to experience farm life firsthand.
