Founders Yiyi Mendoza and Adam Elabd craft ethereal vingegars, kombuchas and other probiotic tonics in a converted church in upstate New York. Trained herbalists with backgrounds in organic medicinal plant farming, the duo pay special attention to sourcing, working with foraged, ceremonial grade, single-origin teas and plants to craft their beverages. Their Mixto 2019 Kombucha Vinegar was made by blending the kombuchas they brewed during the year 2019 and then further fermenting and aging them together in new American oak barrels crafted by master coopers in the Adirondacks. A living record of the Yesfolk brewery's year, its earthy, robust flavor profile works equally well in the glass as it does on the plate. Try it on a salad of winter chicories, or with soda or tonic water for an invigorating winter highball.
